There is the Jefferson Community Action Programs (JCAP) at 504-736-6900. They sometimes know about help all that or may offer it themselves but as for school supplies, food, and emergency bills. Due that, even the housing, before you get an eviction or shut off notice so be proactive. Since your family is living on disability and your son has special medical needs, make sure you tell them all that too.
Also try Second Harvest Food Bank at 504-734-1322 (https://no-hunger.org/). I know they have partner pantries all over Jefferson Parish, and maybe they know of one that has food for families with kids or can point you somewhere that helps with school supplies too.
One other thought, since your son is legally blind and has autism, ask his school or special education office before kindergarten starts. Sometimes they know about backpack drives or other programs, especially for a kid who is blind, that don't get advertised much.
